Crustless Quiche

This recipe was shared with me several years ago by Marilyn Shenton.  It is so easy and versatile! And, it's delicious!  Give it a try, you will not regret it!  -Claire



Crustless Quiche Base

  • 6 eggs
  • 1 cup milk
  • 1 cup grated cheese (cheddar, swiss, mozzarella or mixture!)
  • 2 tablespoons grated Parmesan cheese (optional)
  • Salt & Pepper to taste
  • 1 to 1/2 cups optional ingredients
Optional ingredients:  use whatever you want for a total of 1 to 1 1/2 cups

  • Cubed ham or crumbled cooked bacon
  • Chopped broccoli
  • Chopped tomatoes
  • Sliced onions or green onions
  • Chopped or leaf spinach
  • Chopped asparagus
  • Cooked cubed potato
Instructions:

  • Preheat oven to 350 degrees
  • Lightly spray Deep Dish Pie Pan with non-stick cooking spray
  • Whisk together the eggs, mile, cheese, salt and pepper
  • Stir in additional ingredients
  • Pour into a deep pie dish and bake uncovered for about 45 minutes, or until the center is set and not jiggly.

(The quiche pictured included a mixture of shredded cheeses, crumbled cooked bacon and spinach.  It was delicious!)
