Grilled Greek Chicken Recipe

Marinade the chicken for at least 4 hours and up to 24 hours before grilling.  It pairs very nicely with a Greek Salad. This is good y'all!  -Claire



Marinade:

  • 1/2 cup plain Greek yogurt (full fat)
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup fresh lemon juice
  • zest of one lemon
  • 1 T white balsamic vinegar
  • 2 T fresh oregano leaves, choopped (or 2 t dried)
  • 1T fresh thyme leaves (or 1 t dried)
  • 6 medium garlc cloves, minced
  • 1 t Kosher salt
  • 1 t fresh ground black pepper
  • 1/4 t cayenne pepper
Skewers:
  • 2 large or 3 or 4 smaller boneless chicken breasts, cut into 2" pieces
  • 1 or 2 large bell peppers (green, red or yellow)
  • 1 medium red onion, cut into 1 1/2 " cubes
  • 6-8 skewers (soak first if using wooden)
Instructions:

  • Combine all the marinade ingredients in a large ziploc bag.  Seal and massage to combine all the ingredients.  
  • Add the chicken to the bag, coat the chicken with the marinade.  Marinade 4 to 24 hours, turning the bag a few times while marinading.
  • Prepare grill.
  • Skewer the chicken peppers and onions and grill until chicken cooked through.
