Breakfast for Busy People

I'm not exactly a morning person, so it's not realistic to expect myself to cook something every morning.  Here's a recipe to make once and it's enough for 6 meals!  Low carb and delcious.  It could esily be personalized with other ingredients that you might prefer.  I'll switch up the veggies to keep it interesting. -Claire





  • 12 eggs
  • 1 teaspoon Steak Seasoning Blend
  • 1 green pepper, diced
  • 1/2-1 lb turkey sausage crumbles or cut pieces


Preheat oven to 350 degrees.
Spray a muffin pan with non-stick spray
Place a spoonful of turkey in the bottom of each muffin cup
Beat eggs and steak seasoned together until well mixed and fluffy.  Stir in diced bell pepper.
Spoon the egg mixture equally between each muffin cup, filling to about 3/4 full
Bake until egg is set, 20-30 minutes, check with toothpick.

2 makes a nice meal that will stick with you.  Store the rest in the refrigerator to microwace throughout the busy week!
