Cabbage Sauteed with Chicken

This was easy to prepare, low fat, low carb, inexpensive and delicious!  Enjoy!  -Claire


Ingredients

  • 2 T olive oil
  • 2 chicken breasts, cut into small pieces (or 1.5 lb. chicken thighs if you prefer)
  • 1 medium cabbage
  • 2 medium carrots (shredded)
  • 1 T paprika
  • 2 T tomato paste
  • 1 cup chicken stock
  • salt and pepper (to taste)
  • 1 T hot sauce (optional)
Instructions
  1. Cut chicken into small pieces, slice cabbage thinly, shred carrots.
  2. Sautee chicken in olive oil over medium-high heat for about 5 minutes in large skillet.
  3. Add paprika and tomato paste and stir into the chicken, saute for another few minutes
  4. Add the cabbage and cook about 5 more minutes
  5. Add shredded carrots, chicken stock, salt and pepper. Simmer, stirring occasionally until cabbage is tender and the liquid is absorbed. (approx 30 minutes)
  6. Add hot sauce, if desired.
