Peach Cobbler

Kali told me a couple of weeks ago that if I had any extra time on my hands she would really enjoy having some cobbler. Hint, Hint!  I found this recipe on Pinterest from the kitchen of Chelsea@twotwentyone.  It was very easy to make and my family loved it!


2 cups fresh peaches, sliced
1/4-1/2 cup sugar, depending on sweetness of peaches (I used 1/4 cup and it was just right!)
1/2 cup butter, softened
1 cup self-rising flour (OR sift together 1 cup all-purpose flour, 1 1/4 teaspoons baking powder, 1/8 teaspoon salt)
1 cup sugar
1 egg
1 teaspoon vanilla

Preheat oven to 350 degrees F.  Place peaches in greased 2 qt. baking dish (I used one that was probably closer to 1 1/2 qt. and it was plenty big).  Sprinkle 1/4-1/2 cup sugar over peaches. (I stirred the sugar into the peaches first).  Cream butter and 1 cup sugar together.  Stir in flour.  Add egg and vanilla.  Mix well.  Spoon mixture over peaches.  Bake for 35-45 minutes or until golden brown on top.

Optional:  I served it with a scoop of vanilla ice cream. :-)
