Ham and Hash Brown Quiche

I was looking for a way to utilize some leftover ham and came across this recipe.  It was excellent and reheats beautifully! Enjoy!  -Claire



Ingredients:

3 cups frozen hash brown potatoes, thawed

3 Tablespoons butter, melted

1 cup ham, chopped

1 cup shredded Cheddar cheese

1/4 cup chopped onion

1/4 cup chopped green bell pepper

4 large eggs

1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon ground black pepper


Directions:

Preheat oven to 425 degrees

Press has brown potatoes between paper towels to remove excess moisture.  Transfer potatoes to a 9" Stoneware Pie Plate and press into the bottom and up the sides of the dish to form a crust.  Drizzle with melted butter.

Bake in preheated oven until golden, about 25 minutes.  Remove from oven and reduce heat to 350 degrees F.

Combine ham, cheese, onion and bell pepper in a bowl, spread over potato crust.  Beat eggs, milk, salt and pepper in same bowl and pour over ham mixture.

Bake in oven until eggs are set, 25-35 minutes.  (I turned up the heat to 375 for the last few minutes to brown the top.)
