Aunt Rita's Broccoli Casserole

Aunt Rita brought this Broccoli Casserole to a family gathering many years ago and it's become a favorite that is often requested!  Yummm!  -Claire



  • 2 pkgs. frozen, chopped broccoli
  • 1 can cream of mushroom soup
  • 1 med. onion, chopped fine
  • 1/2 c. mayonnaise
  • 1 c. grated sharp cheddar cheese
  • 1 can water chestnuts, chopped
  • 2 eggs, slightly beaten
  • salt and pepper to taste
  • Ritz cracker crumbs, enough to cover casserole lightly
Cook broccoli until just thawed.  Mix remaining ingredients, except crumbs.  Combine with broccoli.  Spoon into large casserole dish; cover with crumbs.  Bake in a 375 degree oven for 45 minutes.
