Ham, Spinach and 3 Cheese Quiche

This is a great way to use up leftover ham, and you can easily personalize the recipe using whatever ingredients you have on hand!  I'm not gonna lie, this recipe is good y'all and it reheats nicely!  -Claire




Ingredients (to make 2 quiches)

2 tablespoons butter
1 medium yellow onion, chopped
10 eggs, lightly beaten
2 cups half-and-half
salt and pepper to taste
3 cups diced ham
1 6 oz. bag organic baby spinach
1 cup grape tomatoes, cut in half
2 cups shredded swiss/gruyere blend cheese
2 cups shredded sharp cheddar cheese
2 deep dish pie crusts*

Instructions


  1. Preheat oven to 375 degrees
  2. Melt butter in a small nonstick pan and cook onion until soft.  Add spinach and stir occasionally until wilted.  Let cool slightly.
  3. In a large bowl, whisk together eggs, half-and-half, salt and pepper.
  4. Stir in ham, tomatoes and cheeses. (Save a handful of the cheese to sprinkle on top.)
  5. Stir in cooked onion and spinach.
  6. Pour filling into pie crusts, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.  If desired, set oven to broil for just a few minutes to brown the top more.
  7. Serve warm or chilled.


*I bought frozen deep dish pie crusts from Trader Joes that I thawed out and placed them in my Stoneware Deep Dish pie plates.  You could also use the refrigerated Pillsbury Pie Crusts or the deep dish pie crusts already in pans in the frozen food section of the grocery store, just thaw and use!
