Here's a recipe that you can get on the table very quickly and it's delicious and good for you! Enjoy! -Claire
- 1 salmon fillet for every 2 people
- Island Soyaki Sauce (I used Trader Joe's Brand but I'm sure any sauce with the key ingredients of soy sauce, pineapple juice, garlic, ginger and sesame seeds will do.)
- fresh broccoli
- rice (I used a wild rice blend but you could do brown or white based on your preference)
- a little bit of cornstarch (a tablespoon or so)
Marinade the salmon in the Soyaki Sauce for at least 30 minutes. Grill salmon for 3-4 minutes per side (to desired doneness), or cook in a little oil in large skillet. (I used a indoor grill pan.) Cook rice according to package instructions and steam broccoli, to crisp tender. Heat the reserved marinade in a small saucepan to a simmer. Mix a tablespoon or so of cornstarch with a little water to dissolve and add to the marinade mixture to thicken the sauce. Place rice, broccoli, salmon in a bowl and drizzle with thickened sauce. Voila!
