Jimmy's Caesar Salad

A couple of years ago I attended a meeting at church and Betts Willman provided us with a wonderful meal including this Caesar Salad and also Penne a' La Willman which I will also share. It was absolutely delicious! I have made both of her and her husband Jimmy's dishes a number of times. She gave me permission to share :-) -Claire

2 eggs (pasteurized, if you have a fear of raw eggs)
5 cloves of garlic
1 tsp dry mustard
1 tin anchovies
½ cup white vinegar
½ cup fresh squeezed lemon juice (about 4 lemons)
2 cups olive oil
salt & pepper to taste
Romaine lettuce, chopped
Caesar style croutons
parmesan cheese, grated or shredded (or both!)

Place eggs, garlic, mustard, salt, pepper and anchovies in a food processor and process until smooth and anchovies are unrecognizable. Pour in vinegar & lemon juice and process. While machine is running, drizzle in olive oil.

For a smaller crowd, cut this recipe in half!
