The youth group at church served this at their annual Appreciation Meal. It was a huge hit. - Karen
16 oz. pork tenderloin
1/2 t. salt
1/4 t. pepper
1/2 t. chile powder
1/2 t. ground cumin
1/2 t. cinnamon
1/4 c. brown sugar
1/2 T. fresh garlic, finely chopped (or chopped garlic in jar)
1/2 T. Tabasco sauce
Preheat oven to 350 degrees.
Stir together salt, pepper, chile powder, cumin and cinnamon, then coat prk with the spice rub.
Heat oil in a skillet over moderately high heat and brown pork, turning, about 4 minutes. (Browning is optional)
Stir together brown sugar, garlic and Tabasco and pat onto top of tenderloin.
Place pork in a roasting pan and cook in the oven for 20 minutes or internal temp of 170 degrees.
