Honey Chicken Salad with Roasted Pecans

I enjoyed lunch at Holland's UMC in Raleigh yesterday that had been prepared by one of the ladies in their church, Donna Hayes. She served some of the best chicken salad I have ever had! When I asked for the recipe, she shared their church cookbook with me that included this recipe that was submitted by Lisa Stanley. I highly recommend this recipe as well as their entire cookbook! -Claire

4 c. chopped cooked chicken
3 celery ribs, diced (about 1/2 cups)
1 c. Craisins (sweetened dried cranberries)
2/3 c. roasted pecans, chopped
3/4-1 c. mayonnaise
1/3-1/2 c. honey
1/4 t. salt
1/4 t. pepper

Combine chicken, celery, Craisins and pecans. Stir together mayonnaise, honey, salt & pepper. Pour over chicken mixture and stir gently until mixed well.
