Daddy's Dried Beef & Gravy


Some folks refer to this recipe as SOS but they haven't tried our Daddy's! All of his children and grandchildren love it. Serve it up with a fruit salad and you've got a great meal: breakfast, lunch or dinner! -Claire

Gravy: Heat some vegetable oil or butter in a large skillet. Add flour, stirring constantly to brown and keep clumps from forming. Add hot water, a little at a time, stirring constantly until your gravy is desired consistency. Add chopped dried beef and stir until heated through.


Eggs: Place eggs in pot, covering completely in water. Bring to a boil, cover, turn off heat and let sit for about 15 minutes. Drain water, immerse in cold water to cool, then peel. (It's best to use eggs that are about a week old, they peel better than fresh eggs.)

To serve, place toast on plate, slice boiled eggs over toast, smother in the dried beef and gravy mixture, add freshly ground pepper. Yumm!

To reheat leftovers, you may need to add a little water to the gravy if it's too thick.

Tip: If making gravy from scratch stresses you out, I've found that Southeastern Mills Old-Fashioned Gravy mix is the next best thing. Prepare as the package directs and then add the chopped dried beef. (4.5 oz. jar with 1 pkg of gravy.)
